Your XIKAR knife is made of the highest quality materials that require proper care to stay in peak form. After all, a dull knife can cause more harm that good! Here's a quick test to see if your knife is sharp: Hold the blade of your knife at a 45 degree angle to a flat piece of paper on a hard surface. Slowly slide the blade across the paper to slice off a thin top layer. If the paper begins to crumple, its time to sharpen. Through a magnifying glass, a knife looks to be made up of hundreds of tiny teeth-like a saw. After whittling around a campfire or cutting your way out of a jungle, these teeth get twisted and bent out of alignment. This use is what makes a knife dull. A sharpener gets these little teeth back into alignment. Knives vary greatly in terms of steel quality and hardness. The harder the metal the knife is made of, the harder it will be to sharpen, but the longer it will hold its edge. A sharpener then must be made of a material that is harder than the metal it is to abrade. Metal hardness is measured on the "Rockwell Scale". Metal sharpeners are sometimes called "steels". They possess fine grain and give a super finish to an already sharp knife. Butchers and professional cooks use a steel constantly, giving the knife a few strokes before each use. A ceramic sharpener is better than a steel for sharpening hard metals such as stainless steel. (Ceramic is harder than the hardest metal on the Rockwell Scale.) Sharpening methods vary depending on the type of knife you own, the grade of steel it possesses and your desired sharpness.
